Carrot cake from leftover bread

So many people asking for this “Carrot cake” from leftover bread. Accompanied with passion fruit curd, mascarpone cream, honey tuile and candy carrot peel.

Here it is 😄😄😄 recipes below and let me know how it turns out. I had 3 already… before dinner lol 😂😂😂

For the cake (make 4) Bake at 175c for 20 minutes

400g Leftover white bread

130g Brown sugar

1 Egg

100g Full fat yoghurt

50g Vegetable oil

1 orange zest

90g shredded carrot

2 Tsp of Ground Cinnamon

90g of Raisins


Tsp of Baking powder

1 Tsp of Baking soda

1 Tsp of Vanilla Extract

For passion fruit curd

100g passion fruits juice

1 Tbsp of Cornstarch

1 Eggyolk

15g of butter

2 Tbsp of Sugar

For Mascarpone cream

100g of Double cream

100g of Mascarpone

50g of Icing sugar

For honey tuile (Bake at 160c for 7 minutes)

30g of egg white

15g of Honey

30g of Icing sugar

25g of Melted butter

25g of Plain flour
