For the chicken
200g of Chicken thigh fillet (strip sliced)
2 Tbsp of Yoghurt
1 Tbsp of Soy sauce
1 Tsp of Cayenne pepper
Pinch of salt and pepper
1 Tbsp of Plain flour
For the coating
100g of Corn flake
For the flatbread taco
1 cup of Plain flour
2 Tbsp of Melted butter
½ Tsp of Salt
1 Tsp of Sugar
1 Cup of Water
2 Tbsp of chopped chives
For Spicy Ketchup
3 Tbsp of Ketchup
1 Tbsp of Cider vinegar
2 Tbsp of Sugar
1 Tsp of Garlic powder
1 Tsp of Cayenne pepper
1 Tbsp of Soy sauce
For serving
Some chopped lettuce
Method:
1) Slice chicken thigh into strips then marinate with yoghurt, soy sauce and the rest of the ingredients
2) Prep some cornflake and grind them into small pieces by hand, should not take more than 2 minutes
3) Make flatbread batter. Put every flatbread ingredients in a bowl and mix well with no lumps
4) Coat the marinated chicken with cornflake then air fry them for 190c for 10 minutes or pan fry them in vegetable oil
5) In a large pan for making flatbread taco. Heat up the pan then pour some batter in, spread it thinly. Cook for 2 minutes on each side in a medium heat. Once cooked, rest them on a plate
6) In a small sauce pan, make spicy ketchup. Put every ingredients in a heat for 2 minutes or until all the sugar is dissolved. Stir well so it won’t burn
7) Assembling. Make a taco by filling the flatbread with some chopped lettuce, crispy fried chicken and spoon some spicy ketchup on top and TADA!!! You made it 😊😊😊
